Blue Butterfly Baklava Recipe

  • Vegan puff pastry sheets

  • 1 cup condensed coconut milk

  • 1 cup pecans, finely chopped

  • 1 tablespoon blue butterfly pea flower powder

  • 1/4 cup coconut oil, melted

  • 1/4 teaspoon pink salt

  • 1/2 teaspoon rose powder

  • 1/2 teaspoon cinnamon

    Directions:

1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a baking dish with coconut oil.

2. Prepare Filling: In a mixing bowl, combine the condensed coconut milk, finely chopped pecans, and blue butterfly pea flower powder. Mix well until all ingredients are evenly incorporated.

3. Layer Puff Pastry: Lay one sheet of vegan puff pastry in the greased baking dish. Brush the pastry sheet with melted coconut oil.

4. Add Filling: Spread a layer of the pecan mixture evenly over the puff pastry sheet.

5. Repeat Layers: Continue layering the puff pastry sheets and pecan mixture until all the filling is used, ending with a layer of puff pastry on top. Brush the top layer with melted coconut oil.

6. Score and Cut: Use a sharp knife to score the top layer of puff pastry into desired serving sizes. This will make it easier to cut the baklava after baking.

7. Spice Blend: In a small bowl, mix together the pink salt, rose powder, and cinnamon. Sprinkle this spice blend over the top of the baklava.

8. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the baklava is golden brown and crisp.

9. Cool and Serve: Allow the baklava to cool in the baking dish for 10-15 minutes before serving. Cut along the scored lines into individual pieces and serve.

Cardamom Chunk Cookies

  • Brown Butter- 156 g

  • Brown sugar- 140g

  • Cane sugar- 100g

  • Egg-1

  • Vanilla-1 1/2 tsp

  • Cassava Flour- 150g

  • Buckwheat Flour- 50g

  • B.Powder-3/4tsp or 7g

  • B.soda- 6g

  • Cardamom- 1/8 tsp

  • Salt- 4g

Directions:

  1. Combine flours, b.soda + powder, cardamom and salt, whisk together and set aside. 

  2. With a paddle Beat Butter, and sugars for 3-4 min until lighter in color.

  3. Add egg & vanilla, beat until combined. 

  4. Add flour mixture all at once, mix until almost combined.

  5. Add chunks, mix until just combined. 

  6. Shape and chill for 30min - 1hr.

  7. Bake at 350 for 14-17min.
